Super Quick and Tasty Fish Curry

Fish Curry
This super tastey fish curry is ready in no time and is also low in fat and very healthy. By making fish a regular source of your diet you'll be buzzing with good health. If accessable you should try and buy your fish from a sustainable source thus doing your bit for marine ecology. I like to use a good white fish, such as a pacific cod or pollock which tend to work really well in this dish. This dish tends to take my mind back to Manchester in the UK which is where I grew up and is also jam packed with a plethora of curry houses. So go ahead, rustle up the dish and enjoy this tastey and healthy meal.
Fish Curry
The Recipe
1 tbsp vegetable oil
1 large onion chopped
1 garlic clove
1 tsp fresh root ginger
2 tbsp mild curry paste (I use pakats corriander & Cumin)
400g can of tomatoes
200ml vegetable stock
300g of Pollock (or cod) fillets cut into chunks
Rice or naan bread to serve
1. In a deep sided pan heat the oil then add the onion and garlic for 3-4 minutes. Then mix in the paste and cook for a futher 2 minutes. Once mixed in add the stock and tomatoes and bring to a simmer.
2. Once simmering add the fish and cook for 4-5 minutes until the fish beging to flake. Be careful not to cook the fish for too long.
3. Serve immediately with rice or naan and enjoy!!!
